Broiled Breaded Scallops: Submitted by: janann | Date Added: 1 Feb 2010 Ingredients:

1 pound large sea scallops
3 Tablespoons fat-free milk
2 garlic cloves, minced
1/3 cup seasoned dry bread crumbs
1/3 cup freshly grated Paremsan cheese (1-1/2 ounces)
2 Tablespoons finely chopped flat-leaf parsely

Cooking Instructions:

1. Coat the broiler pan with nonstick spray. Preheat the broiler.
2. If the scallops are larger than 1", slice them in half crosswise. Thread onto 4 thin metal skewers. *
3. In a shallow bowl, combine the milkd and garlic, In another shallow bowl, combine bread crumbs, cheese, and parsley.
4. Carefully roll a skewer of scallops in the milk mixture, turning to coat all sides. Then roll in the bread crumb mixture, turning to coat all sides. Lay the skewer on the prepared broiler pan and repeat with the remaining 3 skewers.
5. Broil, turning once for 5-6 minutes or until opaque.

*If you don't have metal skewers, you can use the bamboo ones but make sure you soak them for 30 minutes so they don't catch fire.

Makes 4 servings.
